1 15-ounce container ricotta cheese 8 ounces blue cheese, crumbled (2 cups) 2 T. apple cider (can use milk) Freshly ground black pepper Snipped fresh chives or your favorite herb
Green and/or red apple slices Breadsticks, crackers, pita chips ~ your choice!
Allow ricotta and blue cheese to stand at room temperature for 1 hour. In a medium bowl stir together the cheeses, mashing with a fork until well combined. Stir in the apple cider. Add pepper to taste. Spoon into a serving bowl. Sprinkle with chives or garnish as desired. You can form the mixture into the desired shape that you prefer. It's fun to try for a pumpkin this time of year! I use a cake pan that I bought when I was working at Williams-Sonoma for awhile. I'm joining "Designs by Gollum" for Foodie Friday.
Today I've encountered a couple of friends, a lady in my Bible Study class and an acquaintance that are experiencing less than positive comments being made about them. Sometimes this happens to all of us I think...and I believe it's up to us to determine how we handle it...how our attitude reflects our thoughts and feelings. I realize I'm older but it's just not worth paying attention to IMHO, nor spending valuable time fretting over "stuff" like this. We cannot control other's words or actions ~ the only thing we can control is our attitude about it. And really, those folks need prayer. I don't mean to sound preachy at all ~ I'm not ever like that. It just hurts to see good people being hurt unnecessarily. Does that make sense? :-)
Perhaps I shouldn't even be posting this here but my heart hurts when others hurt.
Ok, I will try to post some photos tomorrow of a little fall/Halloween decorating. The weather has been beautiful here, however a bit warm in the afternoons a couple of days. Tomorrow we have a possibility of rain and temps in the 70's for a high. See me jumping around in joy? :-)

I hope that each of you are enjoying a beautiful fall weekend! The temps have been a bit warm here, however, the mornings and evenings are cool and sooooo enjoyable. Last Thursday the high was 74 and just perfect! It's been a busy week and not sure where the time has gone. I have... . been cleaning out closets and sorting clothes...putting summer things away and going through both summer and fall to see what to keep and what to donate. . done a bit more fall decorating. . had my fur baby groomed, along with my daughter's. . had a fun dinner and dancing outing with her and friends on Friday night. So fun! . had lunch with a good friend. . also done all the "usual stuff" like laundry, cleaning, etc. Not really that fun ~ :-)

I am joining a friend in this process. I will be spending 10 minutes at least 4 times during the day/evening hours engaged in a forgiveness/gratitude meditation.
Forgive 10 people (or 10 situations) then List 10 things I am grateful for.
How: List and Read Out Loud for 10 minutes. Just to make it specific... I will begin at 10 minutes after each hour (every 4 hrs) from the time I wake up until the time I retire. If you want to join me, chime in! :-)

Letting the offender repeat the behaviors,
Forgetting (we will remember...it is what we do with the memory that will determine if it is healthy for us or not).
Letting go and turning over the problem(s) to God.
Allowing ourselves to be free from the toxicity of resentment. Lists of the things we feel resentful about (or situations, people etc) will be LET GO and we will replace these newly emptied spaces in our hearts with Lists of things we are Grateful for.

I cannot tell you how much better I've felt today! This week has been such a drag....dizzy, nauseous, meds, rest, tons of water but hey, it's working! I've been sort of busy today trying to get my house in order and decorating a bit. Perhaps photos later!
