~ Joe's English Toffee ~

This post is a combination of a tribute to a dear friend that passed away June 28th and one of his great recipes, English Toffee.

This photo was taken on his farm...actually taking all the grandkids on a fall hayride. :-)

He stood 6’4”. Mighty was his presence. Strong in strength. Strong in spirit. Although a manly man, he was tender inside. With a spirit of adventure, of attitude and of faith, he lived his life to the fullest. Many trails he crisscrossed between his love of Texas and the mountains of Colorado. Many people he encountered along the way. Those who knew him, loved him deeply. He was a good friend to many. Faithful to his word, and faithful to God.

1 ½ lb butter  (6 sticks of butter)                                 
6 cups sugar
4 cups sliced almonds             
2 cups blanched almonds, chopped fine
dash of salt                                     
2 – 3 16 oz Hershey Chocolate bar
 Melt butter in heavy saucepan and mix well with sugar over high heat. When well-blended add the sliced almonds. Stir until a rich carmel color, just past hard crack stage on the thermometer. Pour into cookie sheets to cool. Immediately place chocolate bars on top to melt. Spread the melted chocolate over entire toffee layer. Place chopped almonds on top of chocolate before it sets.
Allow to set. When set break candy into pieces to eat.

A variety of Joe's candies were served at the visitation and at home after the funeral, along with a few other of his specialty dishes. I hope you make it and enjoy!  If you do, think of the Mountain Man ~ :-)

~ 7 Side Effects of Soda ~

I'll be honest...I've been addicted to Pepsi for years. It became my "comfort" drink during the 9/11 events. We had to work 12 hour days, 6 days a week, mandatory. When I stopped the coffee mid-morning, I then started on Pepsi. It has been extremely difficult to give it up!  It's been a few months since I've had one and I don't keep them at home anymore. I always knew these drinks were not good for us but, in doing research, I've really found out a lot. This is an example:

I've never been able to drink diet drinks at all. The Aspartame triggers migraines plus I get the shakes...honest!  If you do some further research on Aspartame, it has been linked to fibromyalgia, MS and many other illnesses. I drink tons of water daily and often add slices of lemon, lime, orange, cucumbers, etc. Very tasty and refreshing in this heat!

~ Coffee Station ~

I found this tray a long time ago for almost nothing but never decided what I wanted to do with it.  My daughter wanted to create a coffee station so we decided to use this tray and I spray painted it orange.  I know, a lot of folks would have left it white ~ :-)

There were a couple of damaged spots on it but with the paint you can't really tell...and, it adds character, right?  The color of the paint is "Fire Orange" Satin by Rustoleum. It sprayed on beautifully!

And here she is in her new daughter's home!  

Area just to the right...notice the ladybug night light and the one under the cupcake cover?  "Ladybug" has always been one of my nick names for my daughter. :-)

I hope that one day she will allow me to showcase their home.  You would absolutely love it!

~ Sunshine Award ~

Not sure about your interest in learning about me but here goes!  :-)

1. Yes, I'm sick of the heat!  I should not say anything as it isn't as bad as last year...yet. Last year we had 73 days of triple digits.

2. Today is my gorgeous granddaughter's birthday ~ 15!  Where has the time gone?  She asked for a Red Velvet Cake so that's what I did yesterday.

3. I haven't had a Pepsi in weeks!  Trying so hard to just drink water and iced tea...unsweetened. Of course, everyone in the south seems to love sweet tea.

4. I'm transcribing a friend's memoirs. We went to school together from the 4th grade on and I can relate to so many of the stories. It's such fun to remember our days in high school especially. 

5. I've been thinking of writing mine and now I know I will. I think it's a treasure to leave for your kids.

6. I'm a member of a internet prayer group and 2 of the members and I have elected to share prayer time daily...2p.m. my time. One is in England and the other on the west coast. Really a meaningful experience!

7. I am you know. :-)  I take a lot of showers in hot weather and I cannot stand for my feet to get dirty. After being outside, I always wash my feet and especially before going to bed.

8. I love watermelon! I've been having it for breakfast and as a late afternoon snack.

9. I have an "addiction" for candles and lamps.

10. Haven't been blogging much lately as I've been so depressed about my friends' passing. I'm really working on changing this.

11. An extra!  Another sweet friend gave me an award and I will share that soon.
