~ Feeling Human Again & Hamburger Vegetable Soup ~


This is the 3rd week of this flu experience and I'm so grateful to finally begin to feel human. I had the flu shot early, however, I just heard on the National news that this year's vaccine is only 23% effective. Not good! I've had the pneumonia vaccine so perhaps that one has worked. I so hope that each of you and your loved ones are healthy!

Not much sounds good to me except something cold. However, soup is always a good thing! This is a very old recipe but it's easy and fast.


Vegetable Hamburger Soup Recipe

1 pound ground beef
1 c. diced peeled potatoes
1 c. sliced carrots
1 c. shredded cabbage
1 c. sliced celery
2 cans (14-1/2 oz. each) diced tomatoes, undrained
1/4 c. uncooked long grain rice
3 c. water
2 tsp. salt
black pepper to taste
1/4 tsp. dried basil
1/4 tsp. dried thyme
1 bay leaf
~ I can't cook without garlic so add it if you like ~ 
I've also been known to add a can of Rotel  :)

  1. So sorry you are under the weather! Yes, the vaccine is not very effective at all this year. And, my youngest was telling me that out that way people have been hit hard and it is taken a few weeks to bounce back. We thought she may have gotten it, but thankfully it turns out to be one of the awful stomach bug that mimics the flu this year. Still not fun!!

  3. Sounds yummy! The soup, not the flu! It's been so bad everywhere! When I was in Nashville several of my daughter's friends came by to see her in the hospital. Within a day, they had the flu. I'm so glad the baby couldn't be seen and Christy and Troy scrubbed and wore a gown and mask when going in. We all had to. I sure home you are rid of this soon. It is vicious!

  4. You have had a hard run of it lately!!!
    This soup sounds delicious! I spent last night in Quadville so when I arrived back home this evening, Louis Dean had made a tasty stew - using prok chops!! He always thinks outside the box!!

  6. so glad you are beginning to feel better! here, we "only" had the cold from hell, but it was horrid.

    also read, about the 23%.

    now plan on lots of time, to rest and get your strength back. please..
